Today was fantastic celebrating my sons 1st birthday I cooked many dishes..
The day began 10:30 woops i woke up late i"m 2 hours behind schedule and my oven will only allow me to prepare so many dishes. I had marinated overnight 5 different chicken dishes.
1)Hot spicy chicken with 4 different types of hot peppers habereno stuffed with jalapenos and chili's and paprika it was hot.
2) Honey citrus chicken with fresh squeezed limes and pineapples and orange juice mild sweet flavor with thyme.
3) Garden vegetable Chicken green peppers, carrots, onions, olives, celery, tomatoes, cilantro, basil, oregano, parmigiana the juice from this made an excellent chicken soup
4) BBq Chicken smokey bbq flavor with jack daniles whiskey added
5) Corn fried chicken
I was short on time to get these ready in time for the party as i also had to cook rice i used a jasmine thia rice it had extra moisture content so i used less water only 1 and 1/4 th cup per 1 cup rice. I added just a sprinkle of tumeriac and garlic while using peanut oil and a squeeze of fresh lemon the rice was excellent. Right combination not sticky and not hard.
The next dish i prepared was sweet potatoes I cut in small segments i used a pumpkin spice which contains cloves and nutmeg to add flavor with peanut oil was quite good.
For dessert i had different variety of cheesecake strawberry, chocolate, caramel nut swirl, and new york style. My son had a chocolate birthday cake.
His uncle is really talented musician and we sung songs together and it was a great time for the family to bond together. I will never forget his simple yet memorable lyrics Of "Jump, jump jump JUMP" Puts you in a happy bouncy mood.
He plays piano at his church as well and has nice vocals too.
This was the first time i ever cooked for a group of friends and family. It was Sunday morning so i turned on some gospel music this put me in soul food mode. I believe people when they cook should be in a happy mood as you can taste the love in the dish. I felt really good doing this even though i cooked too much food. Everyone was more than stuffed and i welcomed everyone to take food home.
On the way back home i began to think about the future about how i plan to start a local advertising campaign, and take my message to the streets of Miami. These times when your driving or walking are some of the best times to come up with ideas. Like Nissan says 'there is more than the destination there is the journey"

I miss my dad too! Lost him in 2003 he was very charming, good nature, he would talk with everyone and was a good man to everyone. His friends call me all the time and tell me stories about how fun my dad was to hang around with. And how he was like a best friend that they could trust.
