Work from home weeknights can be busy and cooking a full course dinner might not make it to your to-do list. While takeaways are ok every now and then, it is important to eat a healthy and nutritious meal daily. The good news is that you don’t have to stay in the kitchen to cook a healthy and satisfying meal. With a little bit of meal prep, you can create some scrumptious meals. Fried Rice w/ Spicy Cottage Cheese

In a hot wok, sauté some chopped garlic, ginger, carrots, beans, capsicum, broccoli, and peas. Add light soy sauce, star anise, salt, and pepper to taste. Add cooked basmati rice and a handful of raisins. Use brown basmati rice to make this fried rice. Keep stirring for another 10 minutes. Finish with chopped spring onion. Marinade the cottage cheese in sweet chili, soy, lemon, honey, and vinegar. Add some red chilies in sesame oil. Add the marinated paneer and some chili flake. Three-Bean Chilli Rice

This chilli makes for a healthy and comforting dinner on cold evenings. In a pot, sauté some garlic in olive oil. Add cooked cannellini beans, kidney beans, and butter beans. Add tomato paste, oregano, salt, and pepper. Cook for 15 minutes and add the veggie stock. Gently simmer the soup for 30 minutes in pressure cooker or instantpot. Slice zucchini, bell peppers, red onions, and portobello mushrooms into thin strips. Brush the veggies with olive oil, salt & pepper and roast in a grill pan. Cook until veggies get char marks.
