quite correct extra virgin olive oil is ONE of the most healthy at low or normal temperature but when it is over heated and starts to burn it becomes actually toxic, so @odedgrady 'your comments is not quite correct and you should stop using your olive oil for HIGH temperature - it is nt suited to very high temp cooking.

The best oil for cooking that doesn't lose it's properties also in high temperature is olive oil.
Since it got a distinguish and dominating flavor it is not so good for cakes or ingredients with a delicate taste , instead you can use canola oil or sunflower seeds oil.
