A Family Tradition
More than 275 million Americans eat bacon each year, and each one eats roughly 18 pounds of the crisp, savory goodness. Up until now, only those in rural Nebraska had the opportunity to eat Bart’s Bacon, but now that has all changed!
The products span several generations of meat lover artisans. Bart's grandfather created the recipe while working on their family farm in the late 1940s. A dedicated butcher, he earned a following for using premium pork cuts to make his bacon, and brining them in huge stone crocks.
As a child, Bart loved helping his grandfather on the farm. The pair would rise at dawn to blend the family’s brine recipe, and then start the pork bellies soaking. Later, they would double-smoke the bellies using real wood. And when the preparation was complete, they prepared and wrapped the bacon together as they listened to football games on the radio.
Bringing Home The Bacon
In the mid-1970s, Bart’s grandfather began distributing his bacon to family and friends who lived nearby. It didn’t take long for locals to start asking for Bart’s Bacon by name. The proud grandfather was only too happy that the brand name stuck. Bart would go on to pursue a degree in animal science, but he came back to the business with a deeper knowledge of the the meat industry. Bart’s grandfather died in 2012, but the company has preserved his original recipe as a family legacy.
“We have expanded our reach, but we have never lost sight of what makes our bacon truly special: the brine, the careful dwell time, the use of real wood, the double smoking process, and our unwavering commitment to doing things the right way,” a company official said.
Vintage Recipe, Modern Processes
The family recipe may be the same, but innovations and updated health standards have been incorporated into the bacon-making process. The United States Department of Agriculture regularly inspects the packaging plant, and a third-party audit team monitors temperature controls digitally. These measures help ensure safe, high-quality bacon.
The company has also expanded from one into four tempting flavors. Bart's Bacon is available in original thick-cut hardwood double-smoked bacon, hardwood double-smoked hardwood maple and brown sugar bacon, jalapeño applewood bacon, and double thick peppered bacon. Availability may vary by location.
