Best ever pumpkin roll
I have heard about these for a couple of years now that I have never tried them until just the other day. I have to say there quite delicious. So I asked one of the ladies at church had made them it?s really fairly easy to make once you do one or two of them you get the hang of it. There actually fun to make. Here is an easy recipe for them:
Here?s what you?ll need:
? Cake
- 1/4 cup powdered sugar (to sprinkle on towel)
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cups canned pumpkin
? Filling
? 1 pkg. (8 oz.) cream cheese, at room temperature
? 1 cup powdered sugar, sifted
? 6 tablespoons butter or margarine, softened
? 1 teaspoon vanilla extract
Directions
1. First start by preheating oven to 375 degrees, and then take a shallow baking pan lined with wax paper and grease and flour. Then take a clean kitchen towel and sprinkled with powder sugar set this aside for later.
2. In a small bowl combine flour, powder, cinnamon, cloves and salt. In a large bowl beat eggs and sugar together until thick, then beat in pumpkin. Now stir in flour mixture, spread evenly into pan.
3. No bake for 13 to 15 Minutes, immediately loosen cake and turn it onto the kitchen towel, carefully peeling the wax paper off.
4. Begin rolling the cake in the towel and let cool on a wire rack. While cake is cooling begin making the filling.
5. Start by beat cream cheese, powder sugar, butter and vanilla in a bowl. Next carefully unroll cake and spread mixture evenly on cake and reroll in towel. Once it?s rerolled carefully remove towel and slice and enjoy. It?s really good served with coffee, hot cocoa, or even hot tea.
