Fats and oils are essential for cooking. The smoke point is a measurement of a certain temperature where an oil creates visible smoke. The smoke point of the oil depends to a very large extent on its purity and age. Does butter burn? If this is the query you are worried about, here is the answer.  For example, the butter smoke point is lower as compared to ghee. This is because butter contains milk solids which burn easily. Butter burns when reached at 150⁰C while ghee smoke point is 250⁰C. 

The smoke point of cooking oils varies greatly. The smoke point tends to increase as free fatty acid content decreases and the level of refinement increases. The nutritional value of your cooking oil is something one should always consider. Ghee and butter can be used interchangeably but the nutritional value of ghee is higher than butter. The benefits of ghee are now well-known to all which is why it's high in demand among health freaks.

Butter should not be used for high-temperature cooking purposes as it will burn easily and release harmful radicals in the food. On the other side ghee being free from milk solids can be used for all types of high-temperature cooking purposes. This was about the analytical query, does butter burn.
