New Year is coming and I am getting in a mood for celebration with every single day. So I've dedicated to start picking my menu for the big night. This year is little bit more special for me. My boyfriends parents will be at home for the holidays, so I want to impress them and I have to do something special for this purpose. I already chose my menu and I want to share it with you to tell my your opinion about it and if you like it, you can use some of my ideas for New Year's dinner table.

I think that I have to start with something really impressive. Once someone told me “you have the chance to make good first impression only once” so I don't want to risk it. That is way I plan to start with “Grilled Lobster Tails”. Here is the recipe:

Grilled Lobster Tails

Ingredients:
  • 6 Lobster Tails
  • 1\4 Cup of Lemon juice (fresh)
  • 1\4 Cup of Olive Oil
  • 1\4 Teaspoon Salt
  • 1\4 Teaspoon Black pepper
  • 1 Tablespoon Dill (fresh)

Preparation: First of all, you have to cut the lobster tails in to the middle lengthwise . Make sure that you don't cut the whole of them, left the end uncut. The idea of this is to expose the flesh of the lobster in order to be able to smear them. After that mix the other ingredients in a mixing bowl, stir them first and you can start brushing the lobster tails with the mixture. Then you have to preheat the grill to medium temperature. Place the lobsters tails over the grill and cook them for 6-8 minutes. You have to turn them over, only once. That is the recipe, you can serve them with some lettuce and tomato for decoration. Let us move on to the main dinner for the night.

Prime Rib Roast

Prime Rib Roast

Ingredients:
  • You need whole prime rib roast at about 8 kilos, tide.
  • 6 Cloves of garlic
  • 2 Tablespoons of Black Pepper
  • 2 Tablespoons of Salt
  • 2 Tablespoons of Dried Rosemary
  • 2 Tablespoons of Paprika
  • 4 Springs of Rosemary

Preparation: First of all you need to prepare the grill, aim for grill temperature at about 200C. Put large dripping pan over it and prepare for indirect grilling. You must periodically to add water over the pan to keep the dripping from burning. You will have to roust it for 20-25 min for every kilo(for 8 kilo at about 3 hours).

Make small slices all over the Ribs, let them be 2cm deep and place them at a distance from one another no more then 6cm. After that cut the garlic into slivers. Insert garlic slivers and a leaf rosemary in every hole. Combine dried rosemary, black pepper, paprika and salt and then rub all over the meat surface. When you are done place the roast over well oiled grate. You must use some kind of accurate meat thermometer, because you don't want to over cook it. When the meat riches 50C you must cover it with foil. Then left it like that for no more then 30 minutes. Your Prime Rib Roast is ready, enjoy.

Chocolate Soufflé

Chocolate Soufflé

Ingredients:
  • 70 Grams Black Chocolate
  • 3 Tablespoons sugar
  • 3 Eggs
  • 1 Tablespoon heavy cream
  • 1/8 Teaspoon ground cinnamon
  • 1/8 Teaspoon salt
  • 2 Teaspoon all-purpose flour

Preparation: Star with melting the chocolate in the microwave in a microwave-safe bowl for 20 seconds. After it melts you can move it into mixing bowl and put the eggs. Start mixing with mixer on a high speed. After 2-3 minutes you can add the salt, sugar, ground cinnamon and the heavy cream . When it is mixed well you can start to add the all-purpose flour slowly till you are mixing to avoid getting lumps. After you mix it well start to put the mixture in aluminum shapes. Put them in the oven at 200 degrees for 30 minutes. You are ready to impress your guests now.

Never forget that after perfect night the worst part is the cleaning. After every New Year's night I prefer to change my house than to clean it. This thought may ruin my whole day, so you always may consider using professional steam cleaning services after such night. You will literally start the new year fresh :)
